Riassunto analitico
Nel presente elaborato ci si propone di redigere dieci schede terminologiche di bolliti e affettati tipici emiliani che fungeranno da materiale per la creazione delle relative voci di glossario bilingue italiano-francese con definizione. Tali strumenti si rivelano particolarmente efficaci in una situazione comunicativa che ha come fine ultimo la promozione della qualità e della genuinità dei prodotti tipici emiliani al grande pubblico di madrelingua francese. L’attività terminografica svolta nell’elaborato è stata possibile solamente grazie all’analisi teorica della disciplina della terminologia e del suo ramo, la terminografia. Viene quindi proposta una breve storia della terminologia, seguita dall’analisi delle principali caratteristiche e differenze che si riscontrano tra lingua generale e lingue speciali, dalla spiegazione delle peculiarità dei termini e della loro normalizzazione e diffusione al grande pubblico, nonché della pratica terminografica per la loro creazione e convalida. Tenendo conto di tali presupposti, è stato possibile pianificare, redigere e convalidare le schede terminologiche, le quali presentano in modo esaustivo tutte le informazioni che descrivono il termine in oggetto. Dato il carattere univoco della terminologia, particolare attenzione viene data all’analisi delle situazioni in cui si trovavano vari equivalenti in lingua francese, sia essi che siano sinonimi o varianti. Le informazioni contenute nelle schede terminologiche hanno permesso la creazione delle voci di glossario bilingue con definizione di tipo enciclopedico: le definizioni sono state create in lingua francese per permettere ai destinatari di comprendere in modo preciso di quale prodotto di tratta, da non confondere con mere imitazioni. Le schede terminologiche e le voci di glossario sono quindi volte ad una standardizzazione dei termini e aiutano i loro destinatari ad un accesso alla conoscenza settoriale dei prodotti tipici emiliani, promuovendo così la loro diffusione in un contesto più ampio e non solo locale.

Abstract
The object of this paper is the creation of ten terminological cards of some typical boiled meats and cured meats from Emilia. These cards are used as material for the creation of the entries of the bilingual Italian-French glossary with definitions. They are particularly useful in a communication which has the purpose of promoting the quality and the genuineness of the typical products of Emilia to French people. Thanks to the analysis of the key points of the terminology and the terminography, the terminographic activity of this paper has been possible. A brief history of the terminology is therefore presented in the first chapter, which is followed by the explication of the main characteristics and differences among the general language and the special languages, the explication of the characteristics of the terms, of their standardization and their spreading to a vast audience, and finally the terminographic process of their creation. Only after these theoretical assumptions, we were able to plan, to compile and to confirm the reliability of the terminological cards, which contain all the necessary information that describe the terms. A special attention was given to the analysis of situations in which two or more equivalents in French were found. As we said before, the information written in the terminological cards were used to create the entries of the bilingual glossary with encyclopedic definitions: these definitions have been created in French in order to allow the target group to understand unambiguously the product examined. The terminological cards and the entries of the bilingual glossary are directed to a standardization of the terms and thus they help their target group to gain access to the specific knowledge of the typical products of Emilia.
