L’obiettivo del lavoro è stato quello di monitorare due fattori intrinseci che influenzano la crescita e la sopravvivenza dei microrganismi in un alimento, quali il pH e l’attività dell’acqua, in modo tale da prolungare la shelf life della pasta ripiena. In particolare, sono stati analizzati 2 tipi di pasta fresca: i tortellini al prosciutto crudo e i tortelloni con ricotta e spinaci. In entrambi i casi sono stati analizzati singolarmente i ripieni, cercando di modificarne la composizione al fine di creare un ambiente idoneo per rallentare lo sviluppo microbico e quindi prolungare la data di scadenza del prodotto. Alla fine del lavoro è stata analizzata la carica microbica totale del prodotto dopo un giorno dalla produzione, dopo 14, 21, 35, 48, e infine 70 giorni (quest’ultimo consistente nella data di scadenza) per confermare l’effettiva riduzione della crescita microbica. Una volta identificati i valori iniziali di pH e aw, sono stati effettuati studi per ritrovare quale potesse essere quell’ingrediente addizionato al ripieno che potesse abbassare entrambi i valori. In particolare, si è ricercato quell’ingrediente igroscopico (capace quindi di assorbire l’acqua libera e abbassare il valore di aw) e quell’ingrediente in grado di acidificare il ripieno.

Abstract
The objective of the work was to monitor two intrinsic factors that influence the growth and survival of micro-organisms in a food, such as pH and water activity, so as to prolong the shelf life of filled pasta.
In particular, 2 types of fresh pasta were analyzed: tortellini with raw ham and tortelloni with ricotta and spinach.
In both cases, the fillings were analyzed individually, trying to modify their composition in order to create an environment suitable for slowing microbial growth and therefore extending the expiry date of the product.
At the end of the work the total microbial charge of the product was analyzed after one day from production, after 14, 21, 35, 48, and finally 70 days (the latter consisting in the expiry date) to confirm the effective reduction of growth microbial.
Once the initial pH and aw values have been identified, studies have been carried out to find out what could be the ingredient added to the filling that could lower both values. In particular, we have sought that hygroscopic ingredient (able to absorb the free water and lower the value of aw) and that ingredient which is able to acidify the filling.
