Abstract
Hazelnut is one of the most important nut crops worldwide, due to its several human health benefits. The developed market and the high economic value of hazelnuts make them particularly susceptible to economic frauds, so authentication method must be development to safeguard this product. The geographical and botanical authentication of hazelnuts were based on metabolic fingerprinting of key lipidic fractions particularly influenced by climatic and genetic factors. After the treatment of samples was done to obtain the unsaponificable fraction, metabolic fingerprints were obtained by gas chromatography and mass spectrometry detection (GC-MS) coupled to chemometrics. In this way, data set was treated with unsupervised metods, following the classification models were developed with binary and multi-class PLS-DA methods to discriminate between hazelnuts from different origin and cultivar. |
