Lo scopo di questo studio era di indagare il possibile utilizzo dell'ozono gassoso come sanificante per gli ambienti dell'industria alimentare. In primo luogo sono state condotte prove per monitorare alcuni microrganismi di importanza per l'industria alimentare come muffa, lieviti e conta batterica totale e in seguito prove dopo il trattamento ad ozono. Sono state svolte analisi di superficie e aria. Le prove sono state condotte in un'industria alimentare, produttrice di impasti freschi, in un ambiente soggetto ad alta carica microbica, per via dell'umidità, ovvero la zona lavaggio. I risultati hanno confermato l'efficacia antimicrobica, dopo un trattamento di ozono dalla durata di 3 ore, in particolar modo nelle analisi dell'aria. Quest'ultima è stata campionata tramite il SAS (Surface Air System) e inviata sulla superficie di uno specifico terreno. La analisi delle superfici sono state effettuate tramite tamponi. I nostri risultati confermano l'idoneità dell'ozono gassoso come sanificante per l'industria alimentare e ne promuovono la sostenibilità ambientale, sottolineando però la necessità di calibrare i parametri del trattamento in funzione delle esigenze reali del locale di lavoro.

Abstract
The aim of this study was to investigate the possible use of gaseous ozone as a sanitizer for food industry environments. First of all, tests were conducted to monitor some microorganisms of importance for the food industry such as mold, yeast and total bacterial count and then tests after ozone treatment. Surface and air analysis were carried out. The tests were conducted in a food industry, producing fresh doughs, in an environment subject to high microbial load, due to humidity, that is the washing area. The results confirmed the antimicrobial efficacy, after an ozone treatment for 3 hours, especially in air analysis. The latter was sampled through the SAS (Surface Air System) and sent to the surface of a specific terrain. The surface analyzes were carried out using swabs.
Our results confirm the suitability of gaseous ozone as a sanitizer for the food industry and promote its environmental sustainability, underlining however the need to calibrate the treatment parameters according to the real needs of the workplace.
