Nel mercato nazionale e mondiale, sempre più spazio stanno acquisendo i cosiddetti prodotti ‘high protein’. Gli high protein, o ad elevato contenuto proteico, sono alimenti che appartengono svariate categorie, dai prodotti da forno, ai latticini, alle bevande, e presentano, dal punto di vista nutrizionale, un quantitativo in % sul prodotto finito di proteine maggiori rispetto al corrispondente prodotto convenzionale. Tali prodotti, sono destinati ad una categoria bene specifica, che è la categoria degli sportivi, che necessitano di un introito giornaliero di proteine maggiori, rispetto ai consumatori che non praticano regolarmente attività sportiva. A tale proposito, l’azienda NewLat ha deciso di immettersi in questa nuova fetta di mercato, commissionandoci il compito di creare delle formulazioni di biscotti, in cui la quota di proteine fosse incrementata dal 7-8% ad almeno il 25%. Per la realizzazione di tali biscotti, si è deciso di impiegare proteine di origine vegetale, quali cereali e legumi, come proteine isolate dal riso, o dal pisello, o ancora fava e lupino. Le matrici proteiche di origine vegetale sono state caratterizzate della loro frazione proteica è stato valutato il profilo amminoacidico. Le formulazioni testate sono state differenti, fino ad arrivare alla realizzazione di 3 biscotti con un contenuto proteico stimato pari circa al 30%, diversi tra di loro per le matrici proteiche impiegate e per gli aromi. Le tre formulazioni sono state caratterizzate dal punto di vista compositivo (umidità, lipidi, proteine - per confermare i valori stimati-; ceneri); ne è stata misurata l’attività dell’acqua e su di essi sono state eseguite prove di tipo meccanico e sensoriali, per valutarne l’apprezzamento da parte dei consumatori e tutte e tre le formulazioni hanno raggiunto un buon grado di apprezzamento anche da parte dell’azienda committente. Quella risultata più gradita di tutte, biscotto con farina di fava, proteine isolate dal riso ed aromatizzato al cacao è stata oggetto di un test di shelf-life, con il fine di dare alcune indicazioni in merito al termine minimo di conservazione, ma anche di verificare la stabilità “aromatica” di una matrice ad alto contenuto proteico. I biscotti sono stati confezionati in buste di materiale plastico ad alta barriera nei confronti del vapor d’acqua, optando per una soluzione che prevedesse la commercializzazione dei biscotti in monoporzioni. Le buste, contenenti 10 biscotti ciascuna sono state condizionate in una cella climatica in condizioni tropicali (38°C – 90% UR) così da simulare una vita da scaffale accelerata (ASLT) con un fattore di accelerazione prudenzialmente posto pari a 3 (ovvero 1 mese in ASLT corrisponde a 3 mesi in condizioni normali). A intervalli di tempo fissati (15 giorni) sono state prelevate 3 buste per ciascuna tesi sperimentale e sono state eseguite le seguenti determinazioni: calo peso, attività dell’acqua, sostanza secca, prove meccaniche e prove sensoriali. Allo stato attuale della prova, che è ancora in corso, non sono state evidenziate modificazioni significative sul prodotto rispetto alla situazione iniziale, ovvero i biscotti risultano pienamente accettabili dal punto di vista sia chimico-fisico sia dell’apprezzamento sensoriale. In conclusione, l’obiettivo iniziale prefissatoci è stato abbondantemente raggiunto, con una delle tre formulazioni finali, infatti, si è riusciti a raggiungere un quantitativo proteico del 30%, valori ancora oggi difficilmente riscontrabili sul mercato per i prodotti che rientrano nella categoria dei biscotti. Inoltre, grande entusiasmo è stato riscontrato tra gli assaggiatori, che hanno eseguito i test sensoriali sul biscotto aromatizzato al cacao, nell’ultima fase della sperimentazione, in cui il parametro dell’apprezzabilità e della volontà di voler acquistare il prodotto si è mantenuta bene oltre il 60% per tutta la durata del test di shel-life.

Abstract
The so-called 'high protein' products are acquiring more and more space in the national and global markets. High proteins, or foods with a high protein content, are foods that belong to various categories, from baked products to dairy products to drinks, and present, from a nutritional point of view, a quantity of proteins in the finished product that is in percent greater than the corresponding conventional product. These products are intended for a very specific category, which is the category of athletes, who require a greater daily intake of proteins, compared to consumers who do not regularly practice sports.
In this regard, the NewLat company decided to enter this new market segment, commissioning us to create biscuit formulations in which the protein content was increased from 7-8% to at least 25%. To make these biscuits, it was decided to use proteins of vegetal origin, such as cereals and legumes, as well as proteins isolated from rice, peas, or even broad beans and lupins. The protein matrix of plant origin was characterized by its protein fraction, and the amino acid profile was evaluated.
The formulations tested were many, resulting in the creation of three biscuits with an estimated protein content around 30%, different from each other for the protein matrices used and the flavors.
The three formulations were characterized from a compositional point of view (humidity, lipids, proteins, to confirm the estimated values, and ash); their water activity was measured; and mechanical and sensorial tests were carried out on them to evaluate their appreciation by consumers. All three formulations achieved a good level of consumer appreciation. The client company. The most popular one of all, a biscuit with fava bean flour, proteins isolated from rice and cocoa flavored, was the subject of a shelf-life test with the aim of giving some indications regarding the minimum shelf life, but also verifying the “aromatic” stability of a matrix with high protein content.
The biscuits were packaged in plastic bags with a high barrier to water vapor, opting for a solution that involved marketing the biscuits in single portions. The bags, containing 10 biscuits each, were conditioned in a climatic cell in tropical conditions (38°C–90% RH) to simulate accelerated shelf life (ASLT) with an acceleration factor conservatively set equal to 3 (i.e., 1 month in ASLT corresponds to 3 months in normal conditions). At fixed time intervals (15 days), 3 bags were taken for each experimental thesis and the following determinations were carried out: weight loss, water activity, dry matter, mechanical tests and sensory tests. At the current state of the test, which is still ongoing, no significant changes have been highlighted in the product compared to the initial situation, i.e., the biscuits are fully acceptable from both a chemical-physical and sensorial appreciation point of view.
In conclusion, the initial objective set for us was largely achieved with one of the three final formulations, in fact, it was possible to reach a protein quantity of 30%, values that are still difficult to find on the market today for products that fall into the biscuit category. . Furthermore, great enthusiasm was found among the tasters who carried out sensory tests on the cocoa-flavoured biscuit in the last phase of the experimentation, in which the parameter of appreciability and willingness to purchase the product was maintained well beyond 60% for the entire duration of the shelf-life test.
