Riassunto analitico
La tesi ha l'obiettivo di portare alla luce il lavoro che l'azienda Boniser sta mettendo in pratica sul Manuale di Autocontrollo.
La Boniser S.r.l. è un’azienda agricola, sita a Belpasso (CT), che si occupa della lavorazione e trasformazione di materie prime di origine vegetale.
L’azienda si compone di una zona in cui troviamo i campi agricoli dove vengono coltivate la maggior parte delle materie prime che l’azienda stessa lavora.
Le trasformazioni di cui si occupa Boniser riguardano l’estrazione di componenti pregiati che possono provenire da erbe officinali o aromatiche, fiori, piante o anche semi.
Tutto questo permette all’azienda di lavorare con una filiera corta e, inoltre, di riutilizzare numerosi sottoprodotti che vengono poi sfruttati nei propri campi, dando vita così ad un processo etico e sostenibile di economia circolare.
Le azioni di miglioramento di cui tratta l'elaborato hanno come scopo quello di proiettare l'Azienda nella progettazione di un sistema che gli permetta di ottenere la certificazione UNI EN ISO 22000, utile ad interfacciarsi con altre realtà.
In questo lavoro vengono, quindi, riportate le modifiche effettuate sul manuale e anche delle considerazioni utili, che saranno controllate e valutate dall'Azienda al momento della transizione.
All'interno troviamo la presentazione dei requisiti richiesti dalla norma, che devono essere rispettati per il suo l'ottenimento, inoltre, vi è l'aggiornamento apportato nel 2018 con le nuove linee guida che sono state presentate.
Analogamente la tesi si baserà sul punto da cui l'Azienda parte, sui motivi che spingono questa realtà a richiedere una certificazione volontaria di questa portata, e sul percorso che ha svolto fino ad ora per adeguarsi alle richieste della ISO 22000.

Abstract
The thesis aims to bring to light the work that the Boniser company is putting into practice on the Self-Control Manual.
Boniser S.r.l. is an agricultural company, located in Belpasso (CT), which deals with the processing and transformation of raw materials of vegetable origin.
The company consists of an area where we find the agricultural fields where most of the raw materials that the company itself are cultivated.
The transformations Boniser deals with concern the extraction of valuable components that can come from medicinal or aromatic herbs, flowers, plants or even seeds.
All this allows the company to work with a short supply chain and, moreover, to reuse numerous by-products that are then exploited in its fields, thus giving life to an ethical and sustainable process of circular economy.
The improvement actions that the report deals with have the purpose of projecting the company in the design of a system that allows it to obtain the UNI EN ISO 22000 certification, useful for interfacing with other realities.
In this work, therefore, the changes made to the manual are reported as well as useful considerations, which will be checked and evaluated by the Company at the time of the transition.
Inside we find the presentation of the requirements of the standard, which must be respected for its achievement, moreover, there is the update made in 2018 with the new guidelines that have been presented.
Similarly, the thesis will be based on the point from which the Company starts, on the reasons that push this reality to request a voluntary certification of this magnitude, and on the path it has taken up to now to adapt to the requirements of ISO 22000.
