L’arancia, ad oggi, rappresenta uno dei frutti più consumati a livello mondiale. Per sopperire alle esigenze di un mercato più ampio, che vedono tale agrume sempre più protagonista, sorge necessità di migliorare la vita di post-raccolta del frutto, in modo da renderlo più duraturo nel tempo con la conseguente riduzione degli scarti prodotti. Gli agrumi destinati all’esportazione vengono tradizionalmente trattati con antifungini e cere sintetiche che rendono la buccia non edibile. Per cui l’obiettivo di tale tesi è formulare un rivestimento naturale capace di preservare il frutto durante la vita in post-raccolta, minimizzando i danni da attacchi fungini, rallentando la perdita di umidità con conseguenza alterazione della texture, mantenendo inalterate le caratteristiche chimico-fisiche e organolettiche del frutto. Nella fase preliminare è stata valutata l'efficacia di vari rivestimenti con formulazioni diverse a base di polisaccaridi come: carbossimetil cellulosa (CMC), amido di riso e pectina in combinazione con diversi agenti emulsionati, plasticizzanti e agenti antimicrobici in modo da valutare la loro efficacia in termini di traspirazione del frutto, trasparenza del coating ed eventuali danni legati all’applicazione. Fra tutte le formulazioni, quella presa in considerazione è costituita da un’emulsione in acqua di monodigliceridi degli acidi grassi e pectina con l’aggiunta di un antimicrobico ad ampio spettro. Essa è risultata essere la migliore soluzione ai problemi di perdita di umidità dell’agrume. Infatti, i rivestimenti a base di lipidi beneficiano di eccellenti caratteristiche di barriera all'acqua principale causa della perdita di peso. Tuttavia, la formulazione non deve variare la permeabilità ai gas per evitare che si possano incoraggiare fenomeni di anossia o necrosi del tessuto, creando un danno estetico alla superficie del frutto che non risulta più visivamente idoneo alla commercializzazione. Il rivestimento, successivamente, è stato applicato sulla superficie dell’arancia, mediante nebulizzazione ad alta pressione, in modo da permettere che il coating si distribuisse omogeneamente su tutta la superfice e non creasse eccessi. L’asciugatura è avvenuta per mezzo di aria all’interno di una bassina rotante, in modo da farlo aderire al frutto. La fase finale di monitoraggio del rivestimento è stata effettuato ponendo i campioni in camera climatica per 9 settimana di cui le prime 8 a 4°C e l’ultima a 20°C al 90 % di UR, in condizioni reali di stoccaggio dell’agrume in modo da testare la tenuta effettiva del coating. Dai dati raccolti, emerge una considerevole diminuzione della perdita di peso rispetto a campioni non trattati poste alle stesse condizioni, alla terza settimana (T3) la perdita di peso percentuale risulta essere per il controllo 1,96 mentre per il trattato 1,34 ovvero lo 0,62% in meno del trattato rispetto al controllo. Complessivamente dalle analisi effettuati, non si evidenziano alterazioni significative dei valori di pH del succo (che assumono un andamento più a meno costante fra controllo e trattato il pH al T2 risulta essere 3,04 e 3,01), acidità titola, °Brix (che oscillano in un intervallo che va da 13 a 13,50 circa, per entrambi i campioni nelle settimane) e colore. Per cui, la formulazione utilizzata risulta essere una buona alternativa ai coating tradizionali.

Abstract
To date, the orange represents one of the most consumed fruits worldwide. To meet the needs of a wider market, which sees this citrus fruit increasingly protagonist, there is a need to improve the post-harvest life of the fruit, to make it more durable over time with the consequent reduction of waste produced. Citrus fruits destined for export are traditionally treated with antifungals and synthetic waxes that make the peel inedible. Therefore, the aim of this thesis is to formulate a natural coating capable of preserving the fruit during its post-harvest life, minimizing damage from fungal attacks, slowing the loss of moisture with consequent alteration of the texture, keeping the chemical characteristics unaltered. physical and organoleptic properties of the fruit. In the preliminary phase, the effectiveness of various coatings with different formulations based on polysaccharides was evaluated such as: carboxymethyl cellulose (CMC), rice starch and pectin in combination with different emulsified agents, plasticizers, and antimicrobial agents to evaluate their effectiveness in terms of transpiration of the fruit, transparency of the coating and any damage related to the application.
Of all the formulations, the one taken into consideration consists of an emulsion in water of monodiglycerides of fatty acids and pectin with the addition of a broad-spectrum antimicrobial. It turned out to be the best solution to the problems of loss of moisture in the citrus fruit. In fact, lipid-based coatings benefit from excellent water barrier characteristics which are the main cause of weight loss. However, the formulation must not vary the permeability to gases to prevent anoxia or necrosis of the tissue from being encouraged, creating an aesthetic damage to the surface of the fruit that is no longer visually suitable for marketing.
The coating was subsequently applied to the surface of the orange, by means of high-pressure nebulization, to allow the coating to be distributed evenly over the entire surface and not to create excesses. The drying took place by means of air inside a rotating pan, to make it adhere to the fruit.
The final phase of coating monitoring was carried out by placing the samples in a climatic chamber for 9 weeks, the first 8 at 4 °C and the last at 20 °C at 90% RH, in real citrus storage conditions. to test the effective seal of the coating. From the data collected, a considerable decrease in weight loss emerges compared to untreated samples placed under the same conditions, at the third week (T3) the percentage weight loss results to be 1,96 for the control while for the treated 0,62% less in the treated than in the control. Overall, from the analysis carried out, no significant alterations in the pH values of the juice are highlighted (which assume a constant trend between control and treatment, the pH at T2 is 3,04 and 3,01), titre acidity, °Brix (which oscillate in an interval that goes from 13 to 13,50 approximately, for both samples in the weeks) and colour. Therefore, the formulation used turns out to be a good alternative to traditional coatings.
