Recent developments within the foodservice sector saw the emergence of a growing new segment, identified by the Fast Casual restaurants. The birth and the success that this new segment is gaining can be reconducted to a successful Business Model Innovation within the boundaries of the dining industry. Internationally spread, even Italian entrepreneurs embraced this new kind of activity, by establishing brands which operate in the home country as well as abroad. Beginning with the definition of the recent and still debated concepts of Business Model and Business Model Innovation, successively the main characteristics of the Fast Casual segment are analysed. Finally, a real case of an Italian brand named “Maestri della Pasta” is described as example of a Fast Casual format. The considered brand produces and sells fresh pasta-based Italian dishes through outlets located in different metropolitan cities both in the home and foreign countries, and its relevant characteristics are analysed through the Business Model perspective.
