Questa tesi si pone come obiettivo quello di analizzare l’impatto della pandemia di Covid-19 sul comportamento del consumatore in merito alla scelta del luogo d’acquisto per fare la spesa alimentare e sull’esperienza stessa della spesa nel contesto italiano. L’emergenza sanitaria ha influenzato la vita quotidiana sotto diversi aspetti, fra cui le abitudini alimentari e quelle di spesa. Il consumo dei pasti si è spostato all’interno delle mura domestiche, con la conseguente riduzione del trend dell’eating out, l’incremento dell’asporto e della consegna a domicilio e il notevole successo della preparazione domestica del cibo. Non a caso, gli italiani hanno prediletto l’acquisto di ingredienti di base, insieme a quello di surgelati e di prodotti a lunga conservazione. La centralità della casa e l’accelerazione della digitalizzazione della società italiana, causate dalla pandemia, si sono riflettute anche sulle abitudini di acquisto: le vendite dell’e-commerce alimentare hanno subito una crescita straordinaria, anche se le famiglie non sono inclini ad abbandonare i negozi fisici, pertanto il futuro trend del largo consumo sembrerebbe consistere nella multicanalità. Relativamente alle scelte di canalizzazione della spesa, salta all’occhio l’ottima performance dei negozi di prossimità durante il lockdown, e l’accelerazione della crisi degli ipermercati. Tuttavia, l’emergenza sanitaria non ha spazzato via i tradizionali driver d’acquisto, come prezzo, assortimento prodotti, prossimità, confermando la buona performance di supermercati e discount per tutto il 2020. Sembra aggiungersi, però, un nuovo driver di scelta, ossia il livello di affollamento e la presenza di code al punto vendita, che hanno anche influenzato le abitudini di spesa, spingendo molti a concentrare gli acquisti in termini di frequenza e, durante il lockdown, a evitare il fine settimana per fare la spesa. Tali dati hanno costituito il punto di partenza dell’analisi qualitativa volta ad approfondire l’impatto della pandemia di Covid-19 sulle abitudini alimentari e di spesa. Tramite dodici interviste in profondità, l’indagine ha permesso di analizzare se e come è cambiato il carrello della spesa, la scelta del punto vendita e le abitudini relative al consumo dei pasti e alla spesa, oltre alle sensazioni connesse all’esperienza stessa della spesa e l’impatto che l’eventualmente diversa atmosfera del punto vendita ha esercitato sulla shopping experience e sulla canalizzazione degli acquisti. L’indagine ha confermato alcune delle ipotesi, come il persistere dell’influenza dei tradizionali driver nella scelta del punto vendita, e rivelato risultati interessanti sugli argomenti di ricerca, ad esempio il cambiamento dell’esperienza di spesa in termini di sensazioni e abitudini, e la diversa percezione dell’ambiente del punto vendita sotto vari aspetti.

Abstract
The aim of this dissertation is to analyse the impact of the Covid-19 pandemic on consumer behaviour regarding the choice of food shopping location and the grocery shopping experience in Italy. The health crisis has affected daily life in many ways, including eating and grocery shopping habits. Meal consumption has shifted within the home, resulting in a reduction in the trend of eating out, an increase in takeaway and home meal delivery and the remarkable success of home cooking. Not surprisingly, Italians preferred to purchase basic ingredients, along with frozen food and long-life products. The centrality of the home and the acceleration of the digitisation of Italian society, caused by the pandemic, have also been reflected in shopping habits: food e-commerce sales have undergone extraordinary growth, even though households are not inclined to abandon physical stores, so FMCG retail distribution would seem to be multichannel in the future. With regard to the choice of shopping locations, the excellent performance of local shops during the lockdown period and the acceleration of the crisis in hypermarkets stand out. However, the health crisis has not cancelled out traditional purchase drivers such as price, product assortment, proximity, confirming the good performance of supermarkets and discounters throughout 2020. However, a new driver of choice seems to be adding up, namely the level of crowding and queues at the shop, which have also influenced grocery shopping habits, pushing many to concentrate their purchases in terms of frequency and, during lockdown, to avoid weekends for shopping. These data formed the starting point for the qualitative analysis aimed at investigating the impact of the Covid-19 pandemic on eating and grocery shopping habits. By means of twelve in-depth interviews, the survey allowed to analyse if and how the shopping basket, the choice of store and the meal consumption and shopping habits have changed, as well as the feelings related to the shopping experience itself and the impact of the possibly different store atmosphere on the shopping experience and the choice of place of purchase. The survey confirmed some of the hypotheses, such as the ongoing influence of traditional drivers in the choice of retail outlet, and revealed interesting findings on the research topics, for example, the change in the shopping experience in terms of feelings and habits, and the different perception of the shop environment in various aspects.
